Peach Streusel Muffins

These yummy muffins are easy to make — and our guests love them!

Muffins

Milk
1 (8.75) oz. can peach slices, drained, reserving liquid
1/3 cup packed brown sugar
3 tablespoons butter
1 egg
1 1/2 cups all purpose flour
1/4 cup rolled oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon vanilla

Streusel Topping
1/4 cup rolled oats
1 tablespoon chopped pecans
1 tablespoon shreds of whole bran cereal
2 tablespoons brown sugar
2 teaspoons butter, melted

1. Heat oven to 375.  Line 12 muffin cups with paper baking cups and spray paper cups with nonstick cooking spray.  In small bowl, combine all topping ingredients and mix well.  Set aside.

2. Add milk to reserved peach liquid to make 1/2 cup. In blender container, process peach slices until almost smooth, leaving just a few small chunks.

3. In large bowl, combine 1/3 cup brown sugar and 3 tablespoons butter; beat until well blended.  Add milk mixture, peaches and egg; blend.  Add remaining muffin ingredients and stir just until combined.  Divide batter evenly among paper cups and sprinkle about 2 teaspoons topping on each muffin.

4.  Bake 12-15 minutes or until light golden brown.  Remove immediately and serve warm.
